Abstract
This study examines the variability of sialic acids, specifically N-acetylneuraminic acid (Neu5Ac) and N-glycolylneuraminic acid (Neu5Gc), in beef from seven cattle breeds (Holstein Friesian, Red Pied, Maremmana, Chianina, Charolais, Limousin, and Piemontese).
