Metabolome analysis of frozen chicken breast during thawing at room temperature.
Article in Food chemistry: X, 2025. The graph could read no effect estimate from its abstract, so it casts no vote on the map. Cited by 2 papers.
What it found
Each row is one number read from the abstract, on the scale the paper reported it, with its interval. Left of the dashed line favours the treatment, right favours the comparator. Under each row is the sentence it came from. New to these charts? A ten-minute tutorial.
The abstract states no effect estimate the extractor could read, or names no intervention and outcome on the map, so this paper lights no cell and moves no belief. It is still indexed, cited and linked below.
The trial behind it
Trials whose registry record cites this paper, or whose number appears in the abstract. A trial that started after this paper was published is citing it as background, not reporting it.
Neither the registry nor the abstract names a trial number. If this is a trial report, that itself is worth knowing.

Abstract
The quality changes of frozen chicken during thawing directly affect its safety and flavor. However, traditional physicochemical analysis struggles to explain the underlying molecular mechanisms, creating a research gap. This study used metabolomics to investigate thawing Tibetan chicken breasts and identify key differential metabolites and their metabolic pathways. A total of 788 metabolites were identified, with total abundance increasing significantly during thawing. Key differentially abundant metabolites, including 18β-glycyrrhetinic acid and FFA (22:6), were identified. KEGG enrichment analysis showed that "glycerolipid metabolism" and "necroptosis" were significantly enriched during early thawing, while "ABC transporter" and "biosynthesis of phenylalanine, tyrosine, and tryptophan" pathways were significantly enriched in later stages. Metabolite accumulation during thawing had dual effects on flavor. Small peptides and nucleotide metabolites enhanced flavor, while bitter substances and biogenic amines caused off-flavors and potential safety risks. Monitoring metabolites during thawing could optimize strategies for frozen chicken, improving safety and flavor.
